Step into the warmth of our small-batch bakery, where time-honored traditions meet artisan craftsmanship. Each week, we hand-shape organic sourdough loaves that bring comfort and nourishment to your table. This is bread that tells a story — our story, your story, a story of hope rising.
Tikvah (תִּקְוָה) is the Hebrew word for "hope." Every loaf we bake carries this spirit — a belief in goodness, in community, in the simple joy of breaking bread together. We invite you to experience the hope rising in every slice.
We source organic, locally grown ingredients whenever possible. From flour milled from heritage grains to seasonal additions from nearby farms, each loaf connects you to our Wisconsin land and the farmers who tend it with care.
We bake in small batches to ensure every loaf receives the time and attention it deserves. Our sourdough starters are nurtured daily, our dough shaped by hand, our breads baked to golden perfection in small ovens — never rushed, always intentional.
We nurture our wild sourdough starter daily, feeding it with organic flour and filtered water. Our starter is the living heart of every loaf — a culture of wild yeasts that gives sourdough its signature tang and incredible digestibility.
We mix organic flour with water and let it rest (autolyse) before adding our active starter and mineral-rich sea salt. This gentle process develops gluten naturally and creates the structure for an airy crumb.
The dough rests for 12-18 hours as wild yeasts work their magic. We perform gentle folds to build strength while developing deep, complex flavors. This slow fermentation is the soul of true sourdough.
Each loaf is carefully shaped by hand, creating surface tension that allows the bread to rise beautifully. We place the shaped dough into proofing baskets lined with flour-dusted linen for the final rise.
We score each loaf with artistic patterns, then bake in a preheated Dutch oven to create steam. This gives us that signature crackling crust and allows the bread to spring upward into its final golden form.
After cooling, each loaf is ready to bring warmth and nourishment to your table. From our hands to yours — bread made with time, intention, and hope.
